Classic Buttermilk
I was genuinely surprised when I mixed up some of this and poured it into my teeny-tiny single-serve waffle iron. Not only did it mix up quickly and thicken up nicely, but the end result was delightful, if a little papery. The texture is amazingly thin and airy - people looking for a real, fluffy pancake replacement will not find it in this package - but it DOES have a really nice bready texture, even if it's lighter on content than politician's campaign speech. I haven't tried this as an actual pancake yet - only as a waffle - but I imagine it'll be about the same, just a teeeeeeeny tiny bit more dense. The wonderful thing about this is that while it doesn't quite have a pancake texture, it definitely has MOST of that warm, cosy pancake smell and taste, sort of. All in all, if you're pancake hussy, you'll love this as a lighter (literally and calorically) option.
